How to Make Unstuffed Pepper Skillet
- Sauté the onions, peppers, and garlic. Don’t forget to season with salt and pepper.
- Add the beef to the same skillet and cook, while breaking the meat up until browned, about 7-9 minutes.
- Microwave the rice. Follow the package directions- usually, you open a little and then microwave for 90 seconds.
- Stir the rice into the skillet with the tomatoes and spices. You could also serve with rice on the bottom and layer the beef and peppers on top. Or for a lower carb version, serve with cauliflower rice.
- Finally, sprinkle with cheese and serve!

Stuffed Pepper Skillet
Ingredients
- Olive oil
- 1 small onion, diced
- 3 bell peppers, diced
- 2 cloves of garlic, minced
- Salt and pepper
- 1 lb. ground beef
- 1 pkg. microwaveable rice
- 1 can diced tomatoes (about 15 oz.)
- 1 tsp. dried oregano
- 1/2 tsp. cumin
- 1 c. cheddar cheese, shredded
Instructions
- Heat a large skillet with 1-2 Tbsp. of olive oil over medium-high heat. Then, sauté the onion and peppers for 4-5 minutes. Season with salt and pepper. Next, add the garlic and continue to sauté for 2-3 minutes.
- Meanwhile, microwave the rice.
- Move the peppers and onions over to one side of the skillet. Then, add the ground beef and cook until browned, about 7-9 minutes. Season with salt and pepper.
- Stir the rice into the skillet. Then, add the tomatoes, oregano, and cumin. Stir until well combined. Finally, sprinkle with the cheese and allow to melt.
