Stuffed Pepper Skillet

Ingredients
  

  • Olive oil
  • 1 small onion, diced
  • 3 bell peppers, diced
  • 2 cloves of garlic, minced
  • Salt and pepper
  • 1 lb. ground beef
  • 1 pkg. microwaveable rice
  • 1 can diced tomatoes (about 15 oz.)
  • 1 tsp. dried oregano
  • 1/2 tsp. cumin
  • 1 c. cheddar cheese, shredded

Instructions
 

  • Heat a large skillet with 1-2 Tbsp. of olive oil over medium-high heat. Then, sauté the onion and peppers for 4-5 minutes. Season with salt and pepper. Next, add the garlic and continue to sauté for 2-3 minutes.
  • Meanwhile, microwave the rice.
  • Move the peppers and onions over to one side of the skillet. Then, add the ground beef and cook until browned, about 7-9 minutes. Season with salt and pepper.
  • Stir the rice into the skillet. Then, add the tomatoes, oregano, and cumin. Stir until well combined. Finally, sprinkle with the cheese and allow to melt.
