When eating out, I rarely opt for spaghetti. It always looks appetizing as it passes by; however, I guess it feels strange to pay for something so simple (yet delicious!) I usually make another choice, but sometimes wish I had chosen spaghetti. Tip: Avoid Italian restaurants in Canada (I suppose it should be considered a talent- how can anyone mess up pizza???)
As I was driving home tonight, I began to think about dinner. As much as I LOVE to cook, standing in the kitchen and waiting for dinner often does not seem appealing. Then, my mind wandered to the leftover spaghetti squash and meatballs I had prepared the day before. Yum! But, I was trying to be good and didn’t want to eat a lot of carbs for dinner. Then I remembered…this version is made out of vegetables! Yes!! WINNER!
Simple. Healthy. Delicious. Great reheated. Gluten free. Already prepared and waiting in the fridge. What more could I ask for??
