Tomorrow begins the first day of school. For many it means pencils, backpacks, packed lunches, homework, and recess. For me, it means getting home late with little desire to cook. Somehow, it doesn’t matter if I walk in the door at 3:30pm or 6:45pm, I am STARVING! Most dishes are best when first prepared, but I tend to have a severe lack of willpower after 4pm. If something is not pre-made or ready soon poor decisions begin to be made. Ice cream for dinner has happened on far too many occasions.
So, on busy days I need something quick and delicious for dinner. Originally, I bought zucchini this week to make “noodles;” however, I had some ground meat in the fridge that needed to be used. Plus, cumin and cheese pretty much make everything better. Voila- my zucchini boats were born!
This dish is perfect for dinner, an appetizer, or even as a side dish. It’s deliciously versatile! Oh, and it only took about 15 minutes…
