Recently, I spent a little time in Southern California. The sun, the sand, the waves- it was amazing!! While visiting Laguna Beach we stopped at a little restaurant for lunch. I had been eating junk for days. If nothing else, Southern California gives me the desire to eat more salad. So, I began to peruse the healthier side of the menu. They had a steak salad that sounded appealing; however, blue cheese has never been a favorite. Then, I came across a spicy thai salad that piqued my interest. All of the listed ingredients sounded enjoyable, so I took a chance. I couldn’t quite finish it, but I enjoyed every single bite. Yum!!! 🙂
At home, I knew I needed to recreate this dish. While not exactly the same, my version is pretty close and delicious! Plus, it’s great hot or cold!
