With just 5 simple ingredients, these air fryer zucchini fritters make a great side dish! Simply add a protein for a complete meal!
We all have that friend. Or perhaps it’s you… You know. The one that seems to have a garden overrun with gigantic zucchinis. So, of course you take a few off her hands. Why not? But after five loaves of zucchini bread, it’s time to come up with some new ideas.
Crispy on the outside and tender on the inside, these zucchini fritters make a healthy side that pairs well with many dishes. Plus, each recipe uses two whole zucchinis. And with an air fryer, there’s no need to deep fry.
Since making these, I thought of so many possible additions- Shredded potatoes. Red peppers. Sweet corn. Cream Cheese. Chives. Garlic powder. Onion powder. Paprika. Hot sauce. Yum-my!
And, cheese lovers may want to consider doubling the quantity.
Ingredients for Air Fryer Zucchini Fritters
Fresh Zucchini
Gluten Free Flour
Cheese: I chose sharp cheddar, but colby, monterey jack, pepper jack, and Parmesan would also work well.
Egg
Sriracha
How do I grate zucchini??
I recommend using a box grater. You could also use a food processor with a disc for grating.
Why are my zucchini fritters soggy??
Zucchini, as well as other vegetables, tend to have a lot of water. After grating, squeeze out as much water as possible. A cheese cloth is the best method, but you can also use a clean kitchen towel and/or paper towels. Placing in a colander and pressing down will also work.
Reheating Zucchini Fritters
For best results, reheat in the air fryer for 3-4 minutes. A microwave will also work in a pinch, but the fritter will become a bit soft and soggy.

Air Fryer Zucchini Fritters
Ingredients
- 2 medium zucchinis, grated
- 1/2 c. gluten free flour (I used oat and almond)
- 1/2 c. cheese, shredded (or grated Parmesan)
- 1 egg
- 1 - 2 tsp. Sriracha
- Salt and pepper
- Optional: sour cream, cream cheese, scallions
Instructions
- Grate the zucchini. Use a cheese cloth, clean kitchen towel. or paper towels to squeeze out as much water as you can. In a medium mixing bowl, combine the zucchini, flour, cheese, egg, Sriracha, salt, and pepper. Form into 8 patties.
- To help the patties keep their shape, place in the freezer for 10 minutes. Set the air fryer to 350 degrees. Lightly spray with oil. Brown the first side for 5-6 minutes. Then, flip and cook for an additional 6-7 minutes. Depending on the size of your air fryer, you may only be able to cook a few at at time. If desired, top with sour cream, cream cheese, and/or scallions.
