You’re busy enough! Save some time and energy by creating a few simple, yet delicious, side dishes. These sweet carrots will please almost anyone. Plus, who doesn’t like a little bacon?!?

Maple & Bacon Carrots
Ingredients
- 3-4 slices of bacon
- 2 - 2 1/2 lbs. carrots, cut into sticks (8-10 large carrots)
- OR use baby carrots
- 1 tsp. olive oil
- 1 + 2 tsp. maple syrup
- Salt and pepper
Instructions
- Preheat the oven to 400 degrees. In a medium skillet, brown the bacon. You may want to make a little extra bacon for a snack (and more bacon grease.) Meanwhile, peel and cut the carrots. In a small bowl, whisk 1-2 tsp. bacon grease, 1 tsp. of olive oil, and 1 tsp. of maple syrup. In a large bowl, top the carrots with the oil mixture. Stir, until carrots are well-coated. Next, spread into a single layer on a greased or lined baking sheet. Season with salt and pepper.
- Roast carrots for 10-12 minutes. Then, remove and brush with about 2 tsp. of maple syrup. Return to the oven for 7-8 minutes. Remove and brush carrots with any remaining bacon grease and top with crumbled bacon bits. Return to the oven for 3-5 minutes. Carrots should be easily pierced with a fork.
