As the end of summer nears, there’s not much time left for one of my favorite salads. I wish I loved salads. Unfortunately, I’m not a big fan of many dressings. On the plus side, less fat and calories!! For me, a salad needs enough “other stuff” going on that a dressing is not missed or needed. I really enjoy a chicken Caesar salad without the dressing. The only thing better is a similar salad base with a golden crab cake.
A few years ago, I was perusing a salad menu when my eyes fell upon a salad that offered a choice between chicken, steak, shrimp, salmon, and…wait for it…a crab cake!! Genius! Why hadn’t I thought about topping my salads with golden crab deliciousness?!? This salad is light and refreshing, but the crab cake makes the dish filling. This weekend, celebrate the end of summer before it’s too late!
