PB Banana Bread Baked Oatmeal
Ingredients
- 2 medium ripe bananas
- 1/2 c. applesauce
- 1/4 c. brown sugar
- 2 Tbsp. maple syrup
- 1 tsp. vanilla
- 3-4 Tbsp. peanut butter
- 2 eggs
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. oat flour
- 1 c. milk (almond, coconut, soy, etc.)
- 2 c. old-fashioned oats
- 2-3 Tbsp. peanut butter or 1/2 c. peanut butter chips
Instructions
- Preheat the oven to 350 degrees. In a large mixing bowl, mash the bananas with a fork. Then, whisk in the applesauce, brown sugar, maple syrup, vanilla, peanut butter, eggs, baking powder, salt, and oat flour. Carefully whisk in the milk. Then, stir in the oats. Next, pour into a greased 9x13 baking dish or 12 lined-muffin cups. Bake for 30-35 minutes.
- In a small bowl, microwave the peanut butter for 10-15 seconds or melt the peanut butter chips. Drizzle or pipe over the cooled bars or muffins.
