With only 5 simple ingredients, you can be enjoying a sweet, peanut butter treat! Not only is this fudge low carb and keto…it’s also gluten free and vegan! Say what?!?
It can even be sugar-free, depending on your peanut butter. And yet, it still feels dreamy and decadent.

I love coconut and peanut butter, but when I first heard the two together, even I was a bit skeptical. By using coconut cream and coconut oil we can add healthy fats without carbs. But, there will also be some coconut flavor, so if you’re not a fan…then you will need to make a few adjustments. You can use refined coconut oil, which does not have a coconut flavor. You could also use organic shortening and cream, milk, or almond milk.
Without the high sugar content, this fudge will not stabilize at room temperature or when stored in the fridge. It needs to be stored in the freezer.

Fudge recipes, like grandma used to make, can be stored in the freezer if you plan on saving it for later. If you want it ready to eat, store in the fridge. In those recipes, the high sugar content will stabilize the fudge. Recipes with a lower sugar content, like this one, will need to be stored in the freezer. This peanut butter freezer fudge is perfect right out of the freezer!

Keto Peanut Butter Fudge
Ingredients
- 1 c. creamy peanut butter
- 2/3 c. coconut cream
- 2 Tbsp. coconut oil
- 4 - 6 Tbsp. sugar free syrup
- 1 tsp. vanilla
Instructions
- In a medium saucepan, heat the peanut butter, coconut cream, coconut oil, and sugar free syrup. Stir or whisk until smooth. Stir in the vanilla.
- Pour into a freezer-safe dish. If desired, add sprinkles. Freeze for 6+ hours.
