After chocolate chip, I think sugar cookies would be most people’s second favorite cookie. Basic, but also perfect in its simplicity. Today, we’re kicking it up a notch! BAM!
With a light citrus and cinnamon flavor running throughout the cookie dough, then rolled in a cinnamon-sugar mixture just before baking. MAX cinnamon flavor without being overpowering! These gluten free cinnamon cookies are chewy, sweet, and buttery- with an irresistible snap!
Note: Store in an airtight container…however, they will soften a bit while sitting. Best enjoyed immediately, but the flavor will remain for 4-5 days.

What is the difference between cinnamon cookies and snickerdoodles?
Snickerdoodles are very similar to sugar cookies, rolled in a cinnamon-sugar mixture. In addition, cream of tartar is often used in place of baking soda or powder. I’d refer to them as cinnamon-light. Cinnamon cookies can cover a wide range of cookies. Most would have cinnamon in the cookie batter and use baking soda and/or powder, not cream of tartar. All versions, in my opinion, are delicious!
Are cinnamon cookies healthy?
This depends on many factors. In general, cookies are not considered healthy; however, there are versions that would be considered healthier.
Do gluten free cookies taste different?
If you follow the same recipe, no they will not taste exactly the same. Sometimes, they may taste very similar, depending on the other ingredients and any adjustments you make. In store-bought varieties, gluten free cookies often have more butter and/or sugar to account for the loss of gluten. Don’t be misled- gluten free cookies can be absolutely delicious!

Thin & Crispy Gluten Free Cinnamon Cookies
Ingredients
- 1 stick of butter, softened
- 1/2 c. brown sugar
- 2 Tbsp. orange juice
- 1 tsp. vanilla
- 1/2 tsp. cinnamon
- 1/2 tsp. baking soda
- 1 c. gluten free flour blend
Cinnamon-Sugar Mixture
- 2 Tbsp. granulated sugar
- 1/8 tsp. cinnamon
Vanilla Glaze
- 1 Tbsp. butter, melted
- 1/2 c. powdered sugar
- 2 - 3 tsp. vanilla creamer
Instructions
- Preheat the oven to 350 degrees.
- In a large mixing bowl, cream the butter and brown sugar. Then, beat in the orange juice, vanilla, cinnamon, baking soda, and flour. Scoop dough, then roll into balls.
- In a small bowl, mix the sugar and cinnamon. Roll each cookie into the mixture. Next, bake on a greased or lined baking sheet for 10-12 minutes, Allow to cool before removing from the tray.
- In a small bowl, melt the butter. Then, mix with 2 tsp. of creamer. Stir in the powdered sugar. If needed, add more creamer until desired consistency is reached. Mixture should be pourable, but not too thin. Drizzle over the cookies.
