Zucchini is a popular summer squash. You have definitely seen them at the grocery store, local farmer’s market, or when your neighbor drops a few off from their overflowing garden. Some people stop at zucchini bread, but there are so many more ways to use and enjoy zucchini!
Personally, I LOVE zucchini sautéed or air fried, simply seasoned with pepper and garlic salt. Zucchini has a fairly mild flavor and pairs well with so many other foods! So, with a few spices- you can really change the flavor! Or top with a flavorful sauce! My go-to is an organic marinara sauce. It’s so versatile! It can also be a great low-carb alternative for bread and pasta!
By using an air fryer, you can quickly and easily cook zucchini to golden perfection. No need to turn on the oven or spend time sautéing on the stove!

- Don’t crowd the basket! I recommend only cooking 1-2 at a time.
- Dice, don’t slice.
- Shake the basket every few minutes for more even browning.

Ingredients
- 2 medium zucchini, diced
- Spray oil (avocado or olive)
- Salt and pepper (or garlic salt)
Instructions
- Add diced zucchini to the air fryer. Lightly spray with oil. Next, season with salt and pepper.
- Air fry at 400 degrees for 8-10 minutes, shaking basket occasionally, until zucchini is tender and browned.
