Total Time 25 minutes mins
- Olive oil
- 2 small or 1 large bell pepper, diced
- Salt and pepper
- 1 1/2 - 2 c. cooked chicken, diced
- Zest of 1/2 lime
- Juice of 1 lime
- 1 Tbsp. butter
- 4 oz. light cream cheese
- 1/2 - 3/4 c. hot sauce (similar to Frank's)
- 2 Tbsp. brown sugar
- 1/2 c. shredded cheese
- Optional: chopped scallions
In a medium saucepan, heat 1 Tbsp. of olive oil over medium heat. Sauté the peppers for 4-7 minutes. Season with salt and pepper. Then, add the chicken, lime zest, lime juice, butter, cream cheese, hot sauce, and brown sugar. (Note: if you use tabasco or a smaller/more concentrated hot sauce brand, start with 2 Tbsp. and add more sauce slowly. Frank's has heat, but also some flavor. Other brands and varieties tend to have more heat, but less flavor.) Stir and allow to cook for 2-3 minutes. Next, add the cheese and stir until melted. If desired, garnish with chopped scallions.Serve with tortilla chips, pretzels, or chopped veggies.
