Gluten Free Cheez Its

Ingredients
  

  • 4 oz. cheddar cheese, freshly shredded
  • 1 c. gluten free flour blend with xanthan gum
  • 1/4 tsp. garlic powder
  • 1/2 tsp. salt
  • 4 Tbsp. butter, cold & cubed
  • 4 - 5 Tbsp. water

Instructions
 

  • In a large mixing bowl, blend the shredded cheese, gluten free flour, salt, garlic powder, and butter with a fork or pastry blender. Then, add 1 Tbsp. of water at a time, until a dough is formed. Split the dough into two pieces. Next, wrap and refrigerate for at least 30  minutes.
  • Preheat the oven to 375 degrees.
  • Remove the dough from the fridge and allow to sit at room temp for a few minutes. Then, use a rolling pin to roll the dough between two sheets of parchment paper. You want to create a thin, rectangular shape. Use a pizza cutter or a knife to cut into squares. Next, create a small hole in the center of each square.
  • Carefully place squares of dough on a parchment lined baking sheet. Sprinkle with salt. Finally, bake for 14-16 minutes.
