These sausage and pepper subs call for a bit of slicing. Then, help the kids with their homework or go for a quick walk. Within 30 minutes, dinner will be READY TO EAT! That’s right! One sheet pan, a few minutes of prep, and dinnertime happiness.
You could even slice the onion, peppers, and sausage ahead of time. Simply add olive oil, salt, and pepper before roasting. Some people also prefer adding a little tomato sauce just before serving.

Sheet Pan Sausage & Pepper Subs
Ingredients
- 1 large onion, sliced
- 4-5 bell peppers, sliced
- Olive oil
- Salt and pepper
- 1 lb. smoked sausage, sliced into 2-inch pieces
- 4 gluten free rolls
Instructions
- Preheat the oven to 425 degrees.
- On the sheet pan, mix the onion, peppers, and 2 Tbsp. of olive oil. Spread into a single-layer. Next, season the veggies with salt and pepper. Add the chunks of sausage. Then, roast for 25-30 minutes, until tender and browned.
- If desired, brush the rolls with olive oil or butter and toast. Fill rolls with the sausage and peppers.
