No longer just an appetizer, this sheet pan quesadilla is hearty enough for an easy weeknight dinner! It also makes a fun party food that will easily feed a crowd! Consider bringing it along to your next potluck or serving as a Game Day snack!
Quesadillas consist of grilled tortillas filled with a lot of cheese. They are delicious and very easy to customize. You can use a wide array of meat, veggies, and cheese. Plus, you can easily make them gluten free, vegetarian, spicy or mild. Perfect for parties, potlucks, and really anytime you’d like to easily feed a crowd! It will also make the perfect addition to your next Game Day or even Super Bowl celebration!
Over the years, they’ve created quesadilla pans and even separate stand-alone appliances; however, you can only make one quesadilla at a time. That’s a whole lot of time, effort, and energy when you’re looking to feed a group!
But, by creating one giant quesadilla- you can make just one dish that will feed everyone!
With this sheet pan variety, I loaded in the meat and veggies, so cheese is not the main ingredient- it’s just a friendly companion! And, you can use any type of tortilla. I used half flour tortillas and half almond flour tortillas to accommodate my crowd.
Toppings
Meat: chicken, beef, turkey, pork, carne asada, al pastor, etc.
Veggies: onions, peppers, mushrooms, tomatoes, garlic, jalapeno
Cheese: cheddar, monterey jack, asadero
Sauce: salsa, enchilada sauce, pico de gallo, queso

How to Make a Sheet Pan Quesadilla
- Sauté the veggies. In a large skillet, heat 1-2 Tbsp. of olive oil over medium-high heat. Then, sauté the onion and peppers for 4-7 minutes, until tender. Season with salt and pepper. Remove from the skillet and set aside.
- Brown the meat. Using the same skillet, cook the meat until browned. Don’t forget to season with salt and pepper. Next, add the veggies back to the skillet. Season with fajita or taco seasoning.
- Assemble the quesadilla. Brush the pan with melted butter. Then, arrange tortillas so they are sticking half-way over the edge of the pan. Sprinkle a layer of cheese on the bottom. Next, load in the meat/veggie mixture. Then, sprinkle with another layer of shredded cheese. Add tortillas to the center and fold over tortillas around the edges. Finally, brush the top with any remaining butter.
- Bake. Bake at 425 degrees for 25 minutes. Cover the pan with another sheet pan for the first 20 minutes of cooking. Then, remove and allow to finish browning.
- Enjoy! Slice the quesadilla and serve with salsa, scallions, cilantro, guacamole, and more!

- 2 - 3 bell peppers, diced
- 2 lbs. ground chicken, turkey, or beef
- 2 pkg. fajita or taco seasoning mix
- 3 c. shredded cheese
- 16+ tortillas
- 1 Tbsp. butter, melted
