For a creamy dip made with only 4 simple ingredients, this roasted garlic hummus goes great with pita chips or chopped veggies!
Hummus is a Middle Eastern dip made from mashed chick peas or garbanzo beans. The basic flavor usually includes tahini, garlic, and lemon juice. And while I enjoy many of the flavors, something about the texture of beans, even blended, still gets me. I just don’t like it!
But that’s not a problem for this beauty! She is smooth and filled with so much deep flavor, even with only 4 simple ingredients! (plus water, salt, and pepper)
And, there’s a chance I could blend the beans for long enough that eventually they’d be super smooth, but I just don’t feel ready to take that chance. Instead, I take the extra step of cooking canned beans, even though they are already cooked. I even remove some of the skins…mostly because they are falling off. But, the final texture is so velvety-smooth, I’m ok with taking the extra steps!
Since chick peas are loaded with fiber and protein, hummus is a healthy dip. Plus, it pairs beautifully with chopped veggies and pita chips! Or you can spread some on a sandwich or wrap!
Now, I didn’t have any tahini during the making of this hummus, but if I did I would have added some. Tahini also helps to create a smoother consistency.
Tip: Use a high-speed blender for the creamiest consistency! You can also use a food processor, but will need to blend for a few minutes to achieve a similar smoothness.
What is tahini?
Tahini is a paste made from sesame seeds. It is most often used in Middle Eastern and Mediterranean cooking. With a consistency similar to nut butter, it can be found in most larger grocery stores or specialty markets. Check the organic aisle, ethnic foods, or near fancy condiments.

Storing Hummus
Store in an airtight container. Homemade hummus will last in the fridge for 4-5 days. You can also freeze for up to 3 months!

Roasted Garlic Hummus
Ingredients
- Olive oil
- 1 small-medium bulb garlic (about 6-8 cloves)
- 2 cans of chick peas (about 15 oz. each)
- Juice of 1 lemon (about 2 Tbsp.)
- 1/2 c. water
- Salt and pepper
Instructions
- Preheat the oven to 400 degrees.
- Slice the top off the bulb of garlic. Then, drizzle with olive oil. Wrap in aluminum foil. Roast for 30 minutes.
- Optional Step: In a medium saucepan, heat the chick peas with the liquid from the can. If needed, add some water to cover the beans. Once it begins to boil, cover and lower the heat. Simmer for about 20 minutes. Allow to cool for a few minutes. If you prefer, you can also remove some of the skins.
- In a food processor, begin to blend the chick peas. Next, add the garlic cloves, 2 Tbsp. of olive oil, lemon juice, and water. Blend until a smooth dip is formed. Finally, season with salt and pepper.
