A healthy diet means finding nutritious & flavorful food that you still look forward to eating. Good snacks are also important, unless you can see yourself enjoying a plate full of celery sticks everyday. Even if you add some ants on that log, celery is not my idea of a good time. But, peanut butter can usually be a lifesaver! It makes you feel like you’re enjoying a creamy, dreamy dessert. In this case…peanut butter cookie dough!
In actuality, these little nuggets are filled with peanut butter, oats, protein powder and flax or chia seeds. Sweetened with maple syrup and a few mini chocolate chips, this treat will satisfy your sweet tooth!
Ingredients for Peanut Butter Protein Bites
Old-Fashioned or Rolled Oats: These hearty, whole-grains provide fiber and even more protein.
Creamy Peanut Butter: This produces all of that creamy, dreamy flavor AND acts as a binder.
Coconut Oil: Oil gives these bites a dose of healthy fats. Plus, we need something else to help keep all of those oats sticking together!
Maple Syrup: Maple syrup gives a natural sweetness and acts a bit like glue.
Protein Powder: I used a vanilla whey protein powder. Plant proteins tend to be chalkier, but use your favorite variety!
Chia Seeds: These nutrient-dense powerhouses pack antioxidants and tons o’fiber. You won’t even know they’re there!
Liquid: I often use water, but if you are going to store in the fridge you can also use milk.
Chocolate Chips: Why not?!? The only thing that makes peanut butter even better is chocolate!
Can I substitute anything for the peanut butter?
Depending on the consistency, you may need to add more liquid, but…

Why won’t my protein bites stick together???
You need more moisture/liquid! Add water, slowly, and mix well until desired consistency is reached.

Peanut Butter Protein Bites
Ingredients
- 2 c. oats
- 3/4 c. creamy peanut butter
- 3 Tbsp. coconut oil, melted
- 3 Tbsp. maple syrup
- 2 scoops vanilla protein powder
- 3 Tbsp. chia seeds
- 1/4 tsp. salt
- 1/4 – 1/2 c. water
- 1/3 c. mini chocolate chips
Instructions
- In a food processor, blend the oats. Then, add the peanut butter, coconut oil, maple syrup, protein powder, chia seeds, and salt. Begin to blend. Next, add the water until a smooth dough is formed. Blend or stir in the mini chocolate chips. Scoop and roll into balls. Store in the refrigerator.
