Zucchini is so versatile! With a mild flavor, it can be added to many dishes. Plus, it’s delicious on its own! Air fried with a spray of oil and a little garlic salt is my favorite! But, roasting with a baking rack is a close second. With a high water content, zucchini can be a little tricky to cook. It’s easy to end up with a soggy mess. The best methods are sautéing over medium-high heat, air frying, or roasting with a baking rack.
Using just a few simple ingredients, these zucchini spears are roasted to tender perfection! The secret to roasting such large zucchini spears is the baking rack! It will allow air to circulate, which leads to a soft, yet still a bit crisp side dish.

Spices for Roasted Zucchini
- Italian Seasoning
- Garlic
- Parmesan
- Red Pepper Flakes

How to Roast Zucchini
- Preheat the oven to 400 degrees.
- Prepare the zucchini. Wash the zucchini. Then, slice each into quarters lengthwise.
- Season. Toss the zucchini with olive oil, Italian seasoning, salt, and pepper.
- Roast the zucchini. Place a baking rack on top of your sheet pan. Place the zucchini spears about 2 inches apart. This will allow the air to circulate during roasting. Roast for 12-15 minutes.
- Sprinkle with cheese. Next, broil for 1-2 minutes for more browning and melted cheese.

How can I keep the zucchini from becoming soggy???

Ingredients
- 4 medium zucchini
- 1 Tbsp. olive oil
- Salt and pepper (or garlic salt)
- 1 Tbsp. Italian seasoning
- Parmesan or Queso Fresco
Instructions
- Preheat the oven to 400 degrees
- Slice the ends off of each zucchini. Then, slice lengthwise into quarters. Brush each piece with olive oil. Next, season with salt, pepper, and Italian seasoning.
- Place zucchini on a baking rack on top of your baking sheet. Roast in the oven for 12-15 minutes, until tender.
- Remove baking sheet from the oven and sprinkle with cheese. Broil for 2-4 minutes, until browned.
