Most diets tend to be restrictive in some way, The great thing about a keto diet is all of the fun things you CAN eat- bacon, steak, butter, cream cheese… Yes, yes, yes, and more yes! There are also a lot of low-carb fruits and veggies, so it’s not all fun and games. By using almond flour, these babies cannot exactly be called low in fat or calories; however, it is the “good” kind. Just don’t go eating the whole batch at once…
Truly, the only way to make any diet become a lifestyle, you must find ways to incorporate the things you enjoy. And a life without cookies is not one that I want… Luckily, these lemon cookies can be a part of many different diet and lifestyle choices- gluten free, low carb, low sugar, Atkins, keto, or simply a fan of lemon sweets.

What flour can you use to make Keto Lemon Cookies?
For keto-friendly recipes, stick with almond flour, coconut flour, or a mixture. This time I used all almond flour.

Keto-Friendly Lemon Cookies
Ingredients
- 2 oz. full-fat cream cheese, softened
- 4 Tbsp. butter, softened
- 1/4 c. monkfruit sugar
- 2 Tbsp. monkfruit "maple" syrup or simple syrup
- Zest & juice from 1/2 lemon
- 1 egg
- 1/2 tsp. baking soda
- 2 c. almond flour
Glaze
- 1/3 c. powdered sugar (look for a keto version)
- 1 Tbsp. lemon juice
Instructions
- In a large mixing bowl, beat the cream cheese and butter until smooth. Then, beat in the monkfruit sugar, monkfruit syrup, lemon zest, lemon juice, egg, baking soda, and almond flour. Cover dough and refrigerate for 30 minutes.
- Preheat the oven to 350 degrees. Scoop chilled dough onto lined baking sheets. Bake for 10-13 minutes, until just beginning to brown. Allow to cool.
- GLAZE: In a small bowl, whisk the powdered sugar and lemon juice. Drizzle over the cookies. Finally, garnish with lemon zest. Store in the fridge.
