This year, I wanted to make Irish soda bread. It has only been a few years since I dared to try corned beef and that was an amazing decision! The Irish seem to know what they are talking about, at least food-wise…except I’m still not a huge fan of cabbage.
It is not very often that I dare to make bread from scratch. I have never owned a bread maker. It often takes awhile to prepare. Plus, sadly, too many carbohydrates tend to disagree with my body. But sometimes, bread with butter or olive oil is so GOOD! This soda bread seemed like the perfect complement for corned beef. I even tried to make the bread healthier by using mostly whole wheat and oat flour, with just a little all-purpose flour. The results were DELICIOUS.
Irish Soda Bread
Ingredients
- 2 c. whole wheat flour
- 1 c. oat flour
- 1 c. all-purpose flour
- 2 Tbsp. white sugar
- 2 Tbsp. brown sugar
- 1/2 tsp. salt
- 1 Tbsp. baking powder
- 1 tsp. baking soda
- 1/2 c. butter softened
- 1 c. buttermilk
- 1 egg
- 1/2 tbsp. butter melted
- 1-2 Tbsp. buttermilk
Instructions
- Preheat oven to 375 degrees. Then, lightly grease a large baking sheet.
- In a large bowl, mix together flours, sugars, baking soda, baking powder, and salt. Next, add the butter and mix with your hands. Stir in 1 cup of buttermilk and egg. Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round and place on prepared baking sheet. In a small bowl, combine melted butter with 1-2 Tbsp. buttermilk. Brush the loaf with this mixture. Then, cut an 'X' into the top of the loaf.
- Bake for 40-50 minutes, until a toothpick inserted into the center of the loaf comes out clean.
