St. Patty’s Day has come and gone. Time to put away the green hat and leprechaun tie until next year.

NEVER.
I resisted the temptation to buy more corned beef. It was so heavenly and still on sale, but I had already eaten PLENTY and it’s not quite as healthy as a plate of vegetables. If you do have some remaining, time to repurpose those leftovers. A corned beef and vegetable hash with eggs sounds like the perfect brunch or dinner.
Now, we wait for spring!
