This broiled skirt steak is the secret to a quick and easy dinner any time of the year!
Ready in just 15 minutes, but you should let it rest for another 10 minutes to allow the juices to redistribute before slicing. Steak resting time is also the perfect time to roast some veggies! Dinner will be on the table in 30 minutes.
If serving the steak with roasted vegetables, you can return sliced skirt steak to the oven for a few minutes, until desired doneness is reached. You can also use a meat thermometer to ensure proper doneness- Medium-rare: 130-135 degrees.

How to Broil Skirt Steak
- Preheat the broiler.
- Loosen and remove any connective tissue (blueish-white.)
- Season- brush both sides with olive oil and season liberally with salt and pepper.
- Line baking sheet with aluminum foil.
- Place steak on the baking sheet.
- Broil for 4-5 minutes.
- Flip, then broil for another 2-3 minutes.
- Allow to rest.
- Slice against the grain!

Cuts of Meat
Both skirt and flank steak cook best with high heat for a short period of time. They should be a bit rare inside. This makes them perfect for broiling and grilling!
Skirt steak- This cut of meat is cheaper and tougher. It’s also thinner, so it will cook faster.
Flank steak- This cut is leaner, but tends to be thicker and wider.
How to Cut Steak
Steak should always be cut against the grain. This means that you cut across the fibers, leading to tender meat. Otherwise, the steak will be a bit tougher to chew.
Can I marinate overnight?
Yes- steak can be marinated overnight! This improves the flavor and helps to tenderize the meat. If your marinade includes citrus, then only marinate for 1-2 hours. Longer and the citrus can begin to cook the meat, leading to a mushy texture.

How to Broil Skirt Steak
Ingredients
- 1 lb. skirt steak (I like to choose a little over 1 lb. for 4 servings)
- Olive oil
- Salt and pepper
Instructions
- Set the oven to high broil.
- Brush each side of the steak with olive oil. Then, generously season with salt and pepper. Place on a baking sheet and allow to broil on the first side for 4-6 minutes. Next, flip and continue broiling for 2-3 minutes. The cooking time will vary based on the overall size and thickness.
- Allow to rest for a few minutes before slicing. During this time, I often cook veggies in the oven.
- Slice the steak. If desired, return to the oven for 3-5 minutes, as other items are baking.
