Cake is delicious, but sometimes a girl just needs a fudgy brownie! There is no substitute.
In the gluten free world, brownies are awesome because they require a lot less flour than cakes and many other baked goods. There are even flourless versions. Plus, fudgy brownies do not call for light and fluffy, aka the powers of gluten.
Cue the dense chocolate…
These brownies are moist and fudgy, without falling apart. The best of both worlds! Then, warm peanut butter is drizzled over the top…YUM!!! Is there a better flavor combination out there?!?
Serve simply with whipped cream, whipped topping, or vanilla ice cream.

For a fudgier brownie…
- Do not use baking powder
- Omit egg whites and use two yolks per egg listed in the recipe
- Use a little less flour
- Cut a few minutes from the baking time
For a cakier brownie…
- Use baking powder to help leaven
- Use a little extra flour
- Use softened butter and cream with the sugar, instead of using melted butter
- Bake a bit longer

Gluten Free Skillet Brownie
Ingredients
- 2 Tbsp. butter, melted
- 1/2 c. applesauce
- 1/2 c. brown sugar
- 1 tsp. vanilla
- 2 eggs
- 1/4 c. dark or semi-sweet chocolate chips, melted
- 2 Tbsp. dark cocoa powder
- 1/4 tsp. salt
- 1/2 c. gluten free flour blend
Peanut Butter Glaze
- 3 Tbsp. peanut butter
Instructions
- Preheat the oven to 350 degrees.
- In a medium mixing bowl, whisk the butter, applesauce, brown sugar, vanilla, and eggs. Microwave the chocolate chips for 20 second increments, until melted. Whisk in the chocolate, cocoa powder, salt, and flour. Pour into a greased skillet.
- Bake for 17-20 minutes, until an inserted toothpick comes out mostly clean. Allow to cool.
- In a small bowl, heat the peanut butter for 10-15 seconds, until pourable. Spread a thin layer over the brownies. Top with whipped topping, whipped cream, or vanilla ice cream.
