These gluten free peanut butter cookies are adapted from my The BEST Gluten Free Chocolate Chip Cookie Recipe. It truly is a great base cookie recipe! I’ve adjusted it quite a few times to make many types of cookies! And, the peanut butter version turned out beautifully on the first try! Wahoo!
Next time, maybe I’ll try the fork-pressed crisscross pattern. I mean…that is the universal sign for peanut butter cookie, right?!?

How to Make Gluten Free Peanut Butter Cookies
- First, mix the dough. In a large mixing bowl, beat the butter, sugar, vanilla, peanut butter, and eggs. Then, beat in the baking soda, salt, and gluten free flour blend.
- Next, refrigerate the dough. This will allow the dry ingredients to absorb moisture from the wet ingredients. It will also lead to less spreading.
- Time to scoop and bake the cookies. Spoon cookie dough onto parchment-lined baking sheets. For uniformity, use a cookie scoop or roll the dough into balls. Then, bake at 350 degrees for 8-12 minutes, until golden brown.
- Let the cookies cool for 5 minutes. Allow the cookies to cool on the baking sheet. Then, remove and place on a wire rack to cool completely.
- Enjoy! These peanut butter cookies are delicious as is, but you can also add a drizzle of melted chocolate!

What kind of peanut butter should I use?
A creamy peanut butter will work the best. I often use a natural peanut butter, as that’s what I have in the pantry. Stir very well before using it. Also, make sure that your dough doesn’t turn out too dry. If you’d like a bit of a crunch, consider using crunchy peanut butter.
Can I freeze peanut butter cookies?
You bet! Freeze peanut butter cookies in an airtight container or bag for up to 2 months. For the best results, cookies should be wrapped individually.

Gluten Free Peanut Butter Cookies
Ingredients
- 1 stick of butter, softened
- 1/2 c. brown sugar
- 1/4 c. sugar
- 1 tsp. vanilla
- 1/2 c. creamy peanut butter
- 1 egg + 1 egg yolk
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 1/4 c. gluten free flour blend (use 1/2 c. of oat flour)
Instructions
- In a large mixing bowl, cream the butter and sugar. Then, beat in the vanilla, peanut butter, egg, egg yolk, baking soda, and salt. Next, beat in the flour. Cover and refrigerate dough for at least 30 minutes (not 100% necessary, but always a good idea!)
- Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Scoop dough into rounded spoonfuls, placing about 2 inches apart. Bake for 8-12 minutes, until beginning to brown on the edges.
- Allow to cool before removing from sheet pan.
