Waffles made from COOKIE DOUGH with ice cream!
Since I knew the end result was not an actual cookie, I chose to use applesauce for softness and sweetness. Note, this dough will not be as firm as your typical cookie. But, do not worry…
And, if you’re having a busy week, you could also use your favorite refrigerated cookie dough!
20 minutes + 30 minutes chilling time
GF Cookie Waffle Ice Cream Sandwiches
Ingredients
- 1 stick of butter, softened
- 1/4 c. brown sugar
- 2 Tbsp. maple syrup
- 1/2 c. applesauce
- 1 tsp. vanilla
- 2 eggs
- 1/4 tsp. salt
- 1/2 tsp. baking soda
- 1 1/2 c. gluten free flour (I used oat, almond, and tapioca)
- 1/4 c. chocolate chips
- 1/4 c. peanut butter chips
- Ice cream
- Sprinkles, chocolate syrup, etc.
Instructions
- In a large mixing bowl, cream the butter and brown sugar. Then, beat in the maple syrup, applesauce, vanilla, and eggs. Next, beat in the salt, baking soda, and flour. Stir in the chocolate and peanut butter chips.
- Refrigerate dough for 30 minutes. Then, heat waffle iron according to appliance directions. (I set mine to 400 degrees on the griddle setting.) You may need to use non-stick spray. Next, scoop one ball of dough into each waffle well and cook until browned. (Time will likely range from 1-3 minutes.)
- Serve with ice cream and other toppings.
