Happy National Waffle Day!
This recipe may sound a bit strange…but, trust me- cheddar, apples, and cinnamon pair well together!

GF Cheddar Waffles with Cinnamon-Apples
Ingredients
- 4 medium apples, peeled & diced
- 1 tsp. coconut oil
- 2 Tbsp. brown sugar
- 1/2 tsp. cinnamon
- CHEDDAR WAFFLES
- 1 c. milk
- 1 egg
- 1 Tbsp. butter, melted
- 1 tsp. baking powder
- 1 c. flour (I used oat, almond, & tapioca)
- 1/2 c. cheddar cheese, shredded
- DRIZZLE
- 4 oz. light cream cheese, softened
- 2 Tbsp. brown sugar
Instructions
- Heat a medium skillet with the coconut oil over medium heat. Add in the diced apples. Then, stir in the brown sugar and cinnamon. Turn the heat to medium-high and sauté for 4-5 minutes, until apples are fork tender. Set aside.
- In a medium mixing bowl, whisk the milk, egg, butter, baking powder, flour, and cheese. Heat a waffle iron according to the directions. Spray with non-stick spray. Next, pour batter and cook until browned (around 3-4 minutes.)
- In a small bowl, whisk the softened cream cheese and brown sugar. Top waffles with the apples and piped or drizzled cream cheese mixture.
