So, ice cream is my favorite food! Like….absolute, number one in the world! And, I am always up for trying a new ice cream recipe. Especially one that boasts high protein!
Previously, I tried 5-ingredient ice cream-Key Lime Pie Ice Cream. And while fun, that should be a rare treat. It’s yummy and simple to make, but packed with sugar, calories, and fat.
But then, I heard about this cottage cheese ice cream. Say, what?!?
Now, I am not a big fan of cottage cheese. Even just looking, it has an almost curdled-looking texture…gross! But then you hear people talk about how healthy it is with no sugar, and 25 grams of protein. So, I keep giving it another try. Sometimes, you will catch me scooping some into a smoothie. Here, it does add a nice, creamier texture!
So, my use of cottage cheese in cooking is very limited. But here I go…let’s try some cottage cheese ice cream!
This recipe has now gone viral thanks to Lainie Cooks on TikTok. And, it’s not hard to see why! It’s made with only 2 simple ingredients- cottage cheese and a sweetener (honey or maple syrup.) Then, all you need is a blender or food processor. Honestly, even a whisk and a strong arm might do. Stir in something fun- peanut butter, chocolate chips, strawberries, etc.- and freeze.

Cottage Cheese Ice Cream
Ingredients
- 16 oz. cottage cheese
- 1/4 c. maple syrup or honey (I used a monk fruit based maple syrup)
- Optional: 2 Tbsp. of peanut butter
Instructions
- In a blender or food processor, blend the cottage cheese and maple syrup/honey for 1-2 minutes. Mixture should be smooth. Pour into a freezer-safe container. If desired, swirl in 2 Tbsp. of creamy peanut butter. (Microwave PB for 10-15 seconds so it's super creamy and pourable.) Cover and freeze for 4 hours.
