- Olive oil
- 1 onion, sliced
- 2 bell peppers, sliced
- 2 c. broccoli florets, chopped
- Salt and pepper
- 1 1/2 lbs. cooked chicken, shredded or diced
Teriyaki Sauce
- 1 c. water
- 1/4 c. coconut aminos (or soy sauce)
- 1 Tbsp. honey
- 2 tsp. brown sugar
- 1/2 tsp. ginger
- 1/4 tsp. garlic
- 2 Tbsp. corn starch + 1/4 c. water
In a large skillet, heat 1 Tbsp. of olive oil over medium-high heat. Add the onions, peppers, and broccoli and sauté for 5-8 minutes.
Meanwhile, in a small sauce pan, heat the water, coconut aminos, honey, brown sugar, ginger, and garlic. In a small bowl, whisk together the corn starch and water. Then, whisk the corn starch mixture into the sauce. Continue to cook and stir over medium heat for about 5-7 minutes as sauce thickens.
Add the chicken with the veggies. Next, pour the teriyaki sauce over the stir fry. Stir and enjoy!
