Sheet Pan Jambalaya

With only 8 ingredients and 30 minutes, this sheet pan jambalaya makes the perfect family meal any night of the week!

- 1 medium onion, sliced
- 4 bell peppers, sliced
- Olive oil
- Salt and pepper
- 1 Tbsp. Cajun or creole seasoning
- 1 lb. sausage, cut into chunks
- 1 lb. shrimp, peeled and deveined
- 12 oz. frozen cauliflower rice
- 1 lime
- 1 Tbsp. Cajun or creole seasoning
- Optional: scallions, cilantro
Preheat the oven to 425 degrees.
In a medium mixing bowl, mix the onion, peppers, 2 tsp. of olive oil, salt, pepper, and Cajun seasoning. Pour onto a lined baking sheet, and add the chunks of sausage. Bake for 10 minutes.
In the same mixing bowl, mix the shrimp, cauliflower rice, 2 tsp. of olive oil, salt, pepper, Cajun seasoning, and the juice of 1/2 of a lime.
Squeeze 1/2 of a lime over the sausage/peppers mixture. Add the shrimp/cauliflower rice to the sheet pan and mix carefully. Return to the oven for 15-20 minutes. Garnish with scallions and cilantro.
