For a sweet and healthy snack any Girl Scout would love, try these samoa protein bites! With chocolate, caramel, toasted coconut, oats, and cashews- they're irresistibly delicious!
Caramel Sauce: In a small saucepan, melt the brown sugar over low heat. Whisk in the butter. Once melted and smooth, remove from the heat and whisk in the cream. Set aside.
Toasted Coconut: In a small skillet, heat the coconut flakes over low heat. Stir until they are golden brown and fragrant.
In a food processor, blend the oats, cashews, maple syrup, vanilla, 1/4 cup of caramel sauce, 1/2 cup toasted coconut, and chocolate chips. Then, add the water and continue to blend. If sticky, allow to sit for a few minutes. Roll into balls.
In a small bowl, melt the chocolate chips in 20-second increments, stirring after each one. Then, pipe or drizzle over the protein bites. Sprinkle with remaining toasted coconut. Store in the fridge.
