Healthy Peanut Butter Granola

Naturally sweetened with maple syrup, this healthy peanut butter granola makes the perfect crunchy topping for yogurt, smoothies, and more!

- 2 c. old-fashioned or rolled oats
- 1/2 c. pumpkin seeds, roasted
- 1/2 c. walnuts, chopped
- 5 Tbsp. peanut butter
- 3 Tbsp. maple syrup
- 2 Tbsp. butter or coconut oil
- 1/2 tsp. vanilla
- Salt
Preheat the oven to 325 degrees. In a medium bowl, mix the oats, pumpkin seeds, and walnuts. Then, in a small bowl, microwave the peanut butter, maple syrup, and butter, until melted (stir after 15-20 second increments.) Stir in the vanilla. Next, pour over the oat mixture and stir until well combined.
Spread mixture onto a lined baking sheet. Sprinkle with salt. Then, bake for 17-20 minutes, until lightly golden. Allow to cool on the tray before storing in an airtight container.
