- 2 Tbsp. butter
- 1/2 c. gluten free bread crumbs
- 4 medium tomatoes, halved
- 8 oz. cream cheese, softened
- 1 Tbsp. olive oil
- 1 c. shredded cheese, divided
- 1 tsp. dried oregano
- 4 - 5 basil leaves, chopped
Preheat the oven to 400 degrees.
In a small skillet, heat the butter until melted. Then add the breadcrumbs and cook, stirring frequently for 4-5 minutes, until browned.
Halve the tomatoes and carefully scoop out the insides with a spoon. Next, brush with olive oil and season with salt and pepper. Place tomatoes cut-side up in a baking dish.
In a medium mixing bowl, beat the cream cheese and olive oil until smooth. Then, stir in the toasted breadcrumbs, 1/4 cup of cheese, oregano, and basil. Season with salt and pepper. Scoop filling into the tomato halves. Next, sprinkle with the remaining cheese and season with more oregano.
Bake for 15-20 minutes Set oven to high broil and broil for 1-2 minutes, until the cheese is browned.
