Gluten Free Keto Stromboli

Ingredients
  

  • 1 1/2 c. mozzarella cheese, shredded
  • 2 oz. cream cheese
  • 1/4 c. almond flour
  • 1 oz. cream cheese
  • 1/2 tsp. oregano
  • 2 oz. pepperoni
  • 3 oz. ham
  • 4 - 6 slices of cheese
  • 1/4 - 1/2 c. shredded mozzarella
  • Optional: marinara sauce

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a microwave-safe bowl, heat the mozzarella cheese and cream cheese for 30-40 seconds. Mix and then stir in the almond flour. Between two pieces of parchment paper, use a rolling pin to roll dough into a thin, rectangle.
  • Visually split the dough in about half, leaving a little extra room on the end of each side.
  • In a small bowl, mix 1 oz. of softened cream cheese and oregano with a fork. Then, spread a thin layer on the dough. Next, add ham, pepperoni, and cheese. Use the parchment paper to fold over the small piece of extra dough on one side. Then, carefully fold the other side of the dough over to cover the toppings. Finally, tuck the remaining dough under the Stromboli. Place the Stromboli on a parchment-lined baking sheet with the seam on the bottom.
  • Bake for 14-16 minutes, until beginning to brown. Then, set the oven to high broil and broil for 2-3 minutes, until the top is nicely browned.
  • Allow to cool for a few minutes. Then, slice and enjoy!
