Somewhere between a biscuit, scone, and a cookie, these gluten free chocolate chip cookie biscuits make the perfect sweet treat for everyone- including those who are dairy-free, egg-free, vegan, or gluten-free!

Ingredients
  

  • 1 stick of butter, softened (1/2 cup)
  • 1/2 c. brown sugar
  • 1/2 c. applesauce
  • 1 tsp. vanilla
  • 1/2 tsp. baking powder
  • 1 1/2 c. gluten free flour blend
  • 3/4 c. old-fashioned or rolled oats
  • 1 c. chocolate chips

Instructions
 

  • In a large mixing bowl, cream the butter and brown sugar. Next, beat in the applesauce, vanilla, baking powder, and flour. Stir in the oats and chocolate chips. Cover and refrigerate dough for 30 minutes.
  • Preheat the oven to 350 degrees.
  • Scoop rounded spoonfuls of dough on greased or lined baking sheet. Bake for 12-15 minutes, until beginning to brown. Allow to cool on baking sheet before moving to cooling rack.
