Gluten Free Banana Chocolate Chip Bread

- 3 ripe bananas, mashed
- 4 Tbsp. butter, softened (partially melted)
- 1 Tbsp. maple syrup
- 1/4 c. brown sugar
- 1 tsp. vanilla
- 2 eggs
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 1/2 c. gluten free flour blend ( used oat, almond, and a Target GF blend)
- 1/3 c. mini chocolate chips
- Optional: chocolate chips
Preheat the oven to 350 degrees. In a large mixing bowl, mash the bananas with a fork. Then, whisk in the butter, maple syrup, brown sugar, vanilla, and eggs. Next, whisk in the baking powder, baking soda, salt, and flour. Stir in the chocolate chips.
Pour into one large, greased loaf pan or 8 mini, greased loaf pans. Bake for 50-60 minutes for large or 20-25 minutes for mini. An inserted toothpick should come out clean. Allow to cool.
If desired, melt about 1/3 cup of chocolate chips in a small bowl. Drizzle or pipe over the cooled banana bread.
