Taco Tuesday is here! And…it just got a whole lot more interesting! 🌮
Now, I’m not vegan….or even a vegetarian…but I do like to try new things.
So, imagine my surprise when I heard that you can make a pretty tasty taco with pecans. I had to try it for myself!
10 minutes + 3 hours to soak the pecans
Vegetarian Pecan "Meat" Tacos
Ingredients
- 2 c. raw pecans
- 2 c. water
- 1 tsp. coconut aminos or soy sauce
- 1 bell pepper, diced
- 1 tsp. taco seasoning
- Juice of 1 lime
- Tortillas, taco shells, or rice
- Cheese, shredded or crumbly
- Salsa
- 1 handful of cilantro, chopped
- 2 scallions, diced
Instructions
- Soak the pecans in the water and coconut aminos for 3 hours. Then, drain and pulse the pecans, diced peppers, taco seasoning, and lime juice in a food processor. Do not over-process. Serve with your favorite taco fixins.
