Hello, ladies and gents. It’s Meatless Monday!
In the quest for health, I will give most things a try. And while I’ve seen the documentaries and realize there would be so many benefits to giving it up, the hard truth is that I like meat. And honestly, if I were a true vegetarian, I would never get enough protein. I am not the biggest fan of beans and feel as though I would end up living on peanut butter. Wait- actually that doesn’t sound too bad…
But, I can make an effort to eat less meat. I mean…everyone could give up meat at least one day per week! Which is why- some genius created Meatless Monday!
Recently, I spent some time in Southern California. Now, I’m back on the East Coast and missing the many, many delightful tacos I was able to indulge in! While my vacation choices may have included carne asada, fish, shrimp, beef, and chicken, sweet potatoes were my inspiration tonight.
So good, there’s nothing to “miss!”
