Mornings can be rough! Especially Monday mornings. Why are they so difficult??? They come around every week. It’s not like it’s a surprise or anything. But, there’s just something about the beginning of a new week. Maybe it’s just the knowledge of all the things we need to get done before the weekend rolls around again. Daunting. Sigh.
Wouldn’t it be great if we could start each Monday wide-awake and just raring to go?!? I hear that may be the case for a select few. What’s their secret??? Well, this baked oatmeal is no miracle-worker, but it may make your mornings a bit brighter! Plus, it’s packed with whole grains and baked with love.

Ingredients in Snickerdoodle Baked Oatmeal
Coconut Oil
Applesauce
Brown Sugar
Maple Syrup
Vanilla
Eggs
Orange Juice
Baking Powder
Milk
Old-Fashioned or Rolled Oats

What is a snickerdoodle?
Snickerdoodles are cookies, with dough very similar to a sugar cookie. Cream of tartar is added, which provides a bit of a tangy flavor. They are also rolled in a cinnamon-sugar mixture before baking.
WHY IS IT CALLED A SNICKERDOODLE?
These cinnamon-sugar cookies can also be referred to as snipdoodles. While popular in New England, they are believed to have originated from Germany. The name may come from the word schneckennudeln, which loosely translates to “crinkly noodles” in German. The world may never know…but it’s fun to say!
WHAT SHOULD I SERVE WITH SNICKERDOODLE BAKED OATMEAL?

Snickerdoodle Baked Oatmeal
Ingredients
- 2 Tbsp. coconut oil, melted
- 1/2 c. applesauce or yogurt
- 1/4 c. brown sugar
- 2 Tbsp. maple syrup
- 1 tsp. vanilla
- 2 eggs
- 2 Tbsp. orange juice
- 1/2 tsp. cinnamon
- 1/2 tsp. baking powder
- 1/2 c. flour (I used oat flour)
- 1 c. milk (I used almond milk)
- 2 c. old-fashioned or rolled oats
- 1/4 c. sugar
- 1/4 tsp. cinnamon
Instructions
- Preheat the oven to 350 degrees. In a large mixing bowl, whisk the coconut oil, applesauce, brown sugar, maple syrup, vanilla, eggs, orange juice, cinnamon, baking powder, and flour. Carefully whisk in the milk. Then, stir in the oats. Next, pour into a greased 9x13 baking dish or 12 lined-muffin cups.
- In a small bowl, mix the sugar and cinnamon. Sprinkle over the oatmeal. Bake for 30 minutes.
