The new year is perfect for trying new things.
Now, I’m not a vegetarian, but I’m willing to try most things. I feel GREAT when I eat really well, but eating well all of the time is TOUGH. If it was easy we’d all be skinny supermodels. Sometimes, my day is filled with spinach, bananas, lean turkey burgers, and quinoa, and, other times, dark chocolate calls my name… I can’t help it!
I believe in the health benefits of a vegetarian diet, but…I like meat. I CAN commit to eating more vegetarian meals. Truly, it’s not unreasonable to try to eat vegetarian for at least one whole day per week. And, we can do it without resorting to peanut butter and jelly sandwiches!
Serve these with a side of sweet potato fries…even kids will want in on this!
