How to Store Pizza Potatoes
These are best consumed immediately! They can be stored in an airtight container in the fridge for 2-3 days; however, reheated will never be quite as good as the original.
How to Broil Potato Planks
- If desired, peel the potatoes.
- Slice about 1/4 inch thick.
- Brush with olive oil and season with salt and pepper.
- High broil for 6-7 minutes. Potatoes should be almost fork tender and beginning to brown.
- Flip and return to the broiler for 3-4 minutes.
- Add your toppings, then broil for an additional 2-3 minutes, until cheese is melted.

Ingredients
- 2 large potatoes
- 3/4 c. tomato sauce
- 1 c. mozzarella
- Pepperoni or your favorite pizza toppings
Instructions
- Preheat the oven to high broil.
- Slice the potatoes about 1/4 inch thick. Brush each side with olive oil. Then, season with salt and pepper. Broil for 6-7 minutes, until almost fork tender and beginning to brown. Flip and return to the broiler for 3-4 minutes. Remove from the oven.
- Next, top with pizza sauce, mozzarella, and pepperoni. Return to the oven and broil for 2-3 minutes, until cheese is bubbly and beginning to brown.
