I’ve never given a poll, but carrots must be very high on the favorite vegetable list. For many kids, it’s the only vegetable they will eat! Carrots comprise my favorite dessert…so- yep, they would have to be my favorite vegetable too! Cold and crunchy or warm and tender…always delish!
If you like to do a lot of meal prep on the weekends- this recipe is for you! With only 4 ingredients and minimal prep- these roasted carrots make the perfect vegetable side! The oven does most of the work for you. For a faster cook time, simply slice the carrots in half lengthwise.
This recipe is also terrific when you’re looking for a simple side dish. But simple does not have to equal boring! And, they might not make the prettiest plate presentation, but super simple and tasty is more important! These have a mild maple flavor. For a stronger, sweet flavor- brush additional maple syrup over the carrots after cooking or half-way through cooking.

- Sauté in a pan
- Broil in the oven

Maple Bacon Roasted Baby Carrots
Ingredients
- 6 slices of bacon, chopped
- 2 lbs. baby carrots
- Olive oil
- 4 Tbsp. maple syrup
Instructions
- Preheat the oven to 400 degrees.
- In a large bowl, mix the carrots, bacon, 1-2 Tbsp. of olive oil, and maple syrup. Season with salt and pepper. Then, spread into a single layer on a baking sheet. Roast for 35-40 minutes, until fork tender. For a shorter cooking time, slice the carrots in half lengthwise.
- For more maple flavor, brush with 1-2 Tbsp. of maple syrup after removing from the oven.
