Am I old enough to use that yet?? I may not round to 40, but I watched the first episode of F*R*I*E*N*D*S when it originally aired and that was- *cough *cough years ago!
So…back then, we had a vegetable on our plates every night, which often came out of a can. Or maybe that was just my household…
Luckily, there are TONS of fresh fruits and vegetables readily available today. Spaghetti squash has become very popular over the last few years. It does not taste like pasta, but it’s a great alternative. Though I have come up with a few terrific pairings, tomato sauce tends to be my preferred topping. I took the term “spaghetti” squash very literally. Most recently, I veered from my usual meatballs and went with chicken Parmesan. I used refrigerated chicken tenders, but you can easily use grilled chicken or gluten-free breaded chicken. You can also prepare the chicken yourself, which is usually a healthier option, but when you’re pressed for time or tired, take some shortcuts from the grocery store!
It’s so good you will want to go back for seconds! And…you can, because it’s a pile of vegetables!!!!!!!
