Oops, we did it again…
Roasted a turkey, mashed 10 pounds of potatoes, creamed the corn, baked the pies, and whisked a beautiful gravy. Eating all of those foods was fun…but now they have taken over the refrigerator… Dun dun dunnnn!
I’ve found that the best way to enjoy eating a lot of leftovers is to change the flavors and combinations. This year, I took some of my Thanksgiving leftovers and created pizza in a whole new way! With a mashed potato crust and gravy drizzle, you can still look forward to those leftovers on day 18.

Leftover Thanksgiving Pizza
Ingredients
- 2 c. mashed potatoes
- 1 egg
- 1 1/2 c. gluten free four (I used oat and almond)
- 1/4 c. parmesan cheese
- 1 Tbsp. oregano
- 1 - 2 Tbsp. olive oil
- 4 oz. light cream cheese, softened
- 1 c. shredded cheese
- 1 - 1 1/2 c shredded turkey
- 1 - 1 1/2 c. leftover veggies
- 1/2 c. gravy
Instructions
- Preheat the oven to 375 degrees. In a large mixing bowl, beat the mashed potatoes and egg. Then, beat in the flour, Parmesan cheese, and oregano. Pour out onto a floured surface. If sticky, sprinkle more flour on top. Work dough a bit until smooth. Next, carefully roll out about a 14 inch pizza, 1/4 inch thick or less. You can also split the dough and create two smaller pizzas. Bake for 15 minutes.
- Brush pizza dough with olive oil. Next, spread with a thin layer of cream cheese. Then, layer the shredded cheese, turkey, and veggies. Drizzle with gravy. Finally, return to the oven for 10-15 minutes.
