Have you ever noticed that the best meals are somehow created when you’re really hungry? I was planning to use up the last of my leftover ham loaf from Christmas. I was all set to roast some red potatoes to go alongside…but, I was watching TV and the chef made a roasted potato hash and eggs. So…then I really wanted scrambled eggs. And, I now lacked the patience to wait for roasted red potatoes, but I do enjoy hash browns with my scrambled eggs. SCORE! And…bonus, ham loaf sounded great with hash browns!
While I was cooking, I felt the need to munch on some chips. I mean…totally necessary when you’re preparing a large quantity of food. In my defense, I don’t eat a lot of chips, so when a bag is open I can’t help myself. Meh, I don’t always make the best decisions…
I’m sorry- what’s that now?? Did you say chips??
Yep- the munching led to garnishing the dish with crushed sour cream & onion potato chips! Such a good choice! The chips added a burst of flavor and salty crunch that was perfect!
But, I still needed a bit of green. I’ll be honest, I used cilantro only because I did not have any parsley. Lack of availability = Best decision EVER. The cilantro complimented the dish flawlessly!
Umm…you guys, every flavor went together perfectly. Seriously, even I was surprised!! Every. Single. Bite. Was. AMAZING!!!!
Next time I will make this dish on purpose. 🙂
