If you’re still clinging to your new year’s resolution or you’ve finally embraced an all-around healthier lifestyle- no worries! You can still have tasty game-day snacks! You simply need to make a few adjustments!
Instead of a plate full of fried food…we can lightly fry a vegetable. Oh, and these zucchini chips only take 10 minutes!

Lightly-Fried Zucchini Chips
Ingredients
- 2 medium zucchinis
- Salt and pepper
- 1 egg
- 1 tsp. cream
- 1/2 c. almond flour
- 2 Tbsp. Parmesan cheese
- 2 tsp. oregano
- 1/4 tsp. garlic powder
- 1/8 tsp. paprika
- 5+ Tbsp. olive oil
- 1/2 c. Alfredo or tomato sauce
Instructions
- Wash and slice the zucchini into 1/4 in. thick slices. Lightly salt and let sit for 2-3 minutes on a paper towel. In a shallow dish, whisk the egg and cream. In a second shallow dish, mix the almond flour, Parmesan cheese, oregano, garlic powder, paprika, and black pepper.
Heat a large skillet over medium heat with 2-3 Tbsp. olive oil. Dip each zucchini slice in the egg mixture. Then, coat slices with the almond flour mixture. Lightly fry for about 2-3 minutes per side. Add more oil as needed. Serve with Alfredo or tomato sauce.
