Summer is my favorite time of year to eat salads! Which is why I refrain from eating them the rest of the year…
I kid, I kid. Sadly, I remain a bit picky in the salad arena; however, there are a few salads I truly enjoy. And while I cannot claim this as my favorite salad- it would need a crab cake for that!– this crisp and refreshing dish comes pretty close!
If you don’t feel like firing up the grill or a griddle, this salad is also terrific with chopped fresh peaches. No heat required.

Grilled Peach Salad with Honey-Lime Dressing
Ingredients
- 4 slices of bacon, cooked & crumbled
- 2 peaches, cut in half
- Zest of 1/2 lime
- Juice of 1 lime
- 2 tsp. honey
- 1 Tbsp. bacon grease
- 1 Tbsp. olive oil
- 4 c. spinach
- 1/4 c. Pecorino or parmesan cheese, shaved
- 1/4 c. pecans, chopped
Instructions
- Brown bacon in a medium skillet. Reserve 1 Tbsp. of bacon grease for the dressing. (Can substitute with additional olive oil.)
- In a small bowl, whisk the lime zest, lime juice, honey, bacon grease, and olive oil. Use a brush to lightly glaze peach halves with the dressing. Then, pour remaining dressing over the spinach and toss until lightly coated.
- Next, grill the peaches. Top spinach with grilled peaches, bacon, cheese, and pecans. Add chicken, if desired.
