Growing up in a family of picky eaters, knowing what to bring to a family picnic can be challenging. In the summertime, most of us are not into macaroni and potato salads. I know- we’re crazy! Mayo has become a four-letter threat. Gross! Though potato salad features a lot of vegetables, is it even considered healthy?? I will say, these cool, creamy salads seem to pair well with grilled hot dogs and hamburgers. It can be difficult to come up with other dishes that have a similar feeling.
Luckily, this grilled corn salad came along. This mixed veggie salad does not have any mayo. The crunchy peppers blend perfectly with the sautéed onion and corn. I’ve made this quite a few times over the years and I must admit- I don’t really measure ingredients. This time it was more mild and a bit less lime-y. It can be enjoyed alone, alongside grilled meat, atop a salad, with chips and salsa, or in a burrito. It can also be eaten cold or heated.
I’ve yet to meet a person who did not enjoy this salad…and in my family- that is saying a lot!
