A Little More About These Gluten Free Strawberry Pretzel Pie Bites
These little guys start with crushed up gluten free pretzels AND graham crackers, tossed with a little melted butter. Then, some fresh strawberry purée beaten with cream cheese, whipped cream, and a bit of sugar. Yum! Creamy strawberry cheesecake flavor in every bite. These mini treats will give you the salty and sweet taste that everyone will love!

GF Mini Strawberry Pretzel Pie Bites
Ingredients
- 1/2 lb. strawberries
- 1 Tbsp. powdered sugar
- Zest of 1/4 of a lime
- 1-2 tsp. lime juice
- 1 c. gluten free pretzels, crushed
- 1/2 c. gluten free graham crackers, crushed
- 1 1/2 Tbsp. butter, melted
- 8 oz. light cream cheese, softened
- 1/4 c. powdered sugar
- 1/2 c. heavy cream
- 1-2 Tbsp. powdered sugar
Instructions
- In a small saucepan, heat the strawberries and powdered sugar. Cook on low for 10-15 minutes or medium-low for 7-10 minutes. Strawberries should easily mash. Allow mixture to cool for a few minutes. Then, pour into a blender with the lime zest and lime juice. Once smooth, set aside.
- Preheat the oven to 350 degrees. In a food processor, crush the pretzels and graham crackers. Next, blend in the melted butter. Spoon about 1 tsp. of mixture into lined mini-muffin cups. Press a well into the center. Bake for 5-7 minutes.
- In a large mixing bowl, beat the cream cheese until smooth. Then, beat in the strawberry purée and 1/4 c. of powdered sugar. In a separate mixing bowl, beat the cream and powdered sugar, until stiff peaks form. Fold the whipped cream into the cream cheese mixture. Spoon or pipe mixture into mini-muffin cups. Decorate with additional crushed pretzels or graham crackers. Refrigerate until ready to serve.
