What better way to celebrate than with an American, summertime classic- S’MORES!
And, if cheesecake isn’t your thing…simply top each bite with half of a marshmallow!

Gluten Free Mini S'mores Cheesecake Bites
Ingredients
- 5 gluten free graham crackers (about the size of medium cookies)
- 1/2 c. gluten free pretzels
- 1 Tbsp. coconut oil, melted
- 1/3 c. dark chocolate chips
- 2 oz. light cream cheese
- 10 large marshmallows
- 1 Tbsp. butter
- OR
- Large marshmallows
- Optional: graham cracker crumbs, sprinkles
Instructions
- Preheat the oven to 350 degrees. In a food processor, blend the graham crackers and pretzels into small crumbs. Next, blend in the coconut oil. Scoop and press about 1 heaping teaspoon of mixture into lined mini-muffin cups. Bake for 4-5 minutes.
- In a small bowl, microwave the chocolate chips, stirring after 20-second increments. Spoon melted chocolate into each cup. Then, whisk the cream cheese, marshmallows, and butter in a small saucepan, over low heat OR top with half of a large marshmallow. Allow icing to thicken and cool. Next, pipe icing over each bite OR low broil the marshmallows until browned (3-5 minutes.)
